The latest Gumstix Verdex platform is probably your best bet for D.I.Y.
with strong community support:

Another alternative which hasn't quite reached the market yet is VIA's new
Pico-ITX mainboard.  The board is deck'o'cards size, but since it's
x86-based it's probably easier to roll your own system without touching as
much of the hardware issues you'd encounter with other embedded system
approaches.  Looks like Logic Supply is positioned to sell them when they
hit the market:
